Gluten-Free Pumpkin Gnocchi with Kimchi Pesto

Mellow Vegan Kimchi
Single Jar (300g)
Ingredients
Mellow Vegan Kimchi, 2–3 tbsp1 pack Sunny & Luna Pumpkin Gnocchi
2–3 tbsp olive oil
Small handful toasted pine nuts, walnuts, or cashews
Small handful grated parmesan, plus extra to finish
Small knob of butter
Fresh parsley leaves
Black pepper
Method

Cook the Sunny & Luna Pumpkin Gnocchi according to pack instructions. Drain well and toss gently with a small knob of butter while still warm.

Add the Fermary Mellow Vegan Kimchi, olive oil, toasted nuts, and parmesan to a jug or deep bowl. Blend with a stick blender until smooth and pesto-like. Add a little extra olive oil if needed to loosen.

Plate the warm gnocchi and spoon over a generous dollop of kimchi pesto.

Finish with extra grated parmesan, fresh parsley leaves, and black pepper.
