Kimchi Pancakes with Mellow Vegan Kimchi
Kimchi pancakes - or Kimchi Jeon - are a crispy, savoury Korean favourite combining the deep umami of fermented kimchi with a light batter. Ingredients
5 tbsp Fermary Mellow Vegan Kimchi, finely chopped 1 tbsp Fermary Smoky Hot Sauce (for the dip)2 eggs
2 tbsp plain flour (adjust if needed)
Pinch of salt
Pinch of gochugaru flakes (optional)
1–2 tbsp kimchi brine
1 tbsp coconut oil or ghee (for frying)
For the dip
3 tbsp crème fraîche

Prepare the batter: In a bowl, combine the chopped kimchi, eggs, and flour. Add salt and gochugaru (optional). Stir in the kimchi brine to enhance flavour and loosen the batter.

Fry the pancakes: Heat coconut oil or ghee in a pan over medium heat. Spoon small portions of batter into the pan, spreading gently. Cook for 2–3 minutes per side until golden and crispy.

Make the dip: Fold Fermary Smoky Hot Sauce into crème fraîche for a cooling, gut-friendly dip with a spicy kick.

Serve: Enjoy hot, with the dip on the side.
