Pancakes with Mellow Vegan Kimchi
A gut-friendly, fermented twist on a Korean classic
Kimchi pancakes, or Kimchi Jeon (김치전), are a beloved Korean comfort dish that combines the deep umami of fermented kimchi with a light, crisp batter. Made with Fermary Mellow Vegan Kimchi, they become even more vibrant - naturally tangy, gently spiced and full of probiotic goodness.
Cooked in coconut oil or ghee for richness and paired with a cool crème fraîche dip lifted with Smoky Hot Sauce, these pancakes strike the perfect balance of crispy, spicy and creamy. Quick to make and deeply satisfying, they’re ideal as a light meal, appetiser or sharing plate.

Mellow Vegan Kimchi
Single Jar (300g)
Ingredients
5 tbsp Fermary Mellow Vegan Kimchi, finely chopped1 tbsp Fermary Smoky Hot Sauce (for the dip)
2 eggs
2 tbsp plain flour (adjust if needed)
Pinch of salt
Pinch of gochugaru flakes (optional)
1–2 tbsp kimchi brine
1 tbsp coconut oil or ghee (for frying)
For the dip:
3 tbsp crème fraîche

Prepare the batter: In a bowl, mix the chopped kimchi, eggs and flour until combined. Add salt and gochugaru if using. Stir in the kimchi brine to enhance flavour and loosen the batter slightly.

Fry the pancakes: Heat coconut oil or ghee in a pan over medium heat. Spoon small portions of batter into the pan, spreading gently to form pancakes. Cook for 2–3 minutes per side until golden brown and crisp.

Make the dip: Stir Fermary Smoky Hot Sauce into crème fraîche for a cooling, gut-loving dip with a gentle kick.
